Local flavours and global ambitions at The Fat Duck

Nestled amidst the stunning scenery of Te Anau, The Fat Duck isn't your average gastropub. Here, chef and owner Cam Davies, along with his partner and co-owner Selina, leads his team with a passion that goes beyond creating delicious seasonal fare. He's a shepherd of sorts, nurturing young talent and fostering a love for the culinary arts, much like the mentors who guided him on his own journey.

While winter has brought a lull in the usual vibrant bustle, Cam and Selina are optimistic for the warmer months. "Winter has been a bit quiet, but we're using this time to recharge and prepare for the busy summer season," Cam says as he’s in the throes of recruiting more staff to add to his core team of 18.

An exciting Spring/Summer menu has recently launched at The Fat Duck – and a great new cocktail menu! "The summer menu will be a fresh and exciting take on our usual offerings. We're really excited to showcase the best of local produce, with fresh fish from Bluff and wild venison from Fiordland" he says.

This focus on local suppliers isn't just about flavour; it's a testament to the importance of community. Cam acknowledges the incredible mentors who guided him in his youth, chefs who readily shared their knowledge. Now, he feels that it's his turn to pay it forward.

One of the highlights of his work is collaborating with young chefs. "Mentorship is a huge part of what I do," Cam says. "I'm lucky to have had great mentors in my career, and I want to pass that knowledge on to the next generation."

Alongside creating amazing dishes, Cam’s collaborative focus is about connecting with a new generation of culinary talent. Recently, Cam’s training for the upcoming Global Chef Competition finals in Singapore presented a great opportunity for young chefs as they helped out in the practice runs, soaking up every detail. Seeing their passion and dedication provides continuous motivation for Cam.

"Collaborating with young chefs is one of the most rewarding aspects of my job," he says. "Seeing their passion and dedication is inspiring."

Of course, summer also brings the pressure of retaining The Fat Duck's coveted "Top 50 Gastropub – Lower South" title. Collaborating with his head chef, Cam understands the challenge of maintaining their top spot amongst some excellent competition from gastropubs around Aotearoa – but, understandably, he’s keeping the details of any entries close to his chest.
“We’re not letting anything slip, you’ll just have to come in and try it out for yourselves!”
